Winter Wine

As it was explained to me, these grapes must ripen, and then remain in the vine well into the winter.  The process requires 3 days of 15 degree temperatures and the crush is done in an acclimated environment so the grapes remain frozen throughout. 

Grapes for Ice wine are something that in the last 10 years has only been harvested 5 times on the peninsula.  It has become a sought after as a very sweet wine as the sugars are more concentrated because of the freezing process.
